– 2 large artichokes
– 1 tablespoon lemon juice
– 3 eggs
– 1/4 cup heavy cream
– 1/4 cup grated Parmesan cheese
– Salt and pepper to taste


Step 1: Prepare the Artichokes
– First, we need to prepare the artichokes. Start by trimming off the tough outer leaves until you reach the pale green ones. Then, using a sharp knife, cut off about an inch from the top of each artichoke.

– Next, trim any remaining tough parts from around the base and stem of the artichokes. Peel away any tough skin from the stem as well.

– Once trimmed, rub lemon juice all over both artichokes to prevent them from turning brown.

Step 2: Steam or Boil Artichokes
– Now it’s time to cook our prepared artichokes. You have two options here – steaming or boiling.
* Steaming method: Place a steamer basket in a large pot filled with water up to its level. Put both artichokes on top of the basket and cover with a lid. Steam for about 40 minutes until they are tender and easily pierced with a fork.

Step 3: Remove Choke
– After cooking, remove your cooked artichokes from either steamer or pot carefully (they will be hot!) and set aside until cool enough to handle.

– Once cooled down slightly, gently spread apart their leaves using your fingers or spoon so you can see the fuzzy choke at the center. With a spoon, scoop out and discard the choke, being careful not to remove any of the heart.

– Once rid of the chokes, carefully scrape off any remaining leaves or small prickly bits from each artichoke.

Step 4: Prepare Artichoke Mixture
– Preheat your oven to 375°F (190°C) while we prepare our delicious artichoke mixture.

– In a medium-sized bowl, crack open three eggs and whisk them together until well beaten.
