Ingredients

Basic Egg Bites:

  • Nonstick cooking spray
  • 8 large eggs
  • 1 cup milk
  • Kosher salt and pepper

Sweet Pea and Ricotta:

  • 3 tbsp. ricotta
  • 3/4 cup frozen peas, thawed and coarsely mashed
  • 4 scallions, thinly sliced

Pico and Cheddar:

  • 1 1/4 cup pico de gallo, well drained
  • 3 oz. extra-sharp Cheddar cheese, coarsely grated (approx. 1 cup)

Greens and Gruyere:

  • 2 cups baby kale, roughly chopped
  • 3 oz. Gruyere cheese, coarsely grated (approx. 1 cup)

Directions:

  1. Heat your oven to 350°F and coat a 12-cup muffin pan with nonstick cooking spray.
  2. In a large bowl, whisk together the eggs, milk, 1/2 teaspoon each of salt and pepper, and ricotta if you’re using it.
  3. Divide half of the egg mixture among the prepared muffin cups, followed by your desired fillings (except for the grated cheese), and then the remaining egg mixture. Top with grated cheese if you’re using it.
  4. Bake until the egg bites are puffed and set, which usually takes about 20 to 25 minutes.

Make-Ahead Tip:

You can individually wrap each egg bite in plastic and store them in the freezer for up to a month. When you’re ready to eat, unwrap from plastic, wrap in a damp paper towel, and microwave until warmed through, which typically takes about 2 minutes.
